Ingredients:

1 pound peeled and deveined shrimp or 4 boneless, skinless chicken breasts 1 tablespoon olive oil Salt and pepper to taste 8 cups washed and dried baby spinach 2 cups sliced strawberries 1/2 cup crumbled feta cheese 1/4 cup chopped walnuts 1/4 cup balsamic vinaigrette Directions:

Prepare a grill or grill pan by heating it up on medium-high heat.
Add the olive oil, salt, and pepper to the chicken or shrimp and toss. The shrimp or chicken should be grilled on each side for 5-7 minutes, or until they are cooked through and have grill marks. When using chicken, cook it until the internal temperature reaches 165°F.
Combine the chopped walnuts, feta cheese, baby spinach, and strawberries in a large bowl.
Toss the grilled chicken or shrimp or shrimp in the salad with the balsamic vinaigrette.
